Amaretto Truffles


Valentine’s Day is almost here, and we’ve got a super easy (but totally indulgent) treat for your true love or best gal - AMARETTO TRUFFLES.

All you need is some heavy cream, good quality bittersweet chocolate, a splash of amaretto liquer (can also sub almond extract!), some fun toppings, and the willpower to wait for them to chill.

We have a new obsession with Fancy Sprinkles, and loved how their Rose All Day blend turned out on these cuties - but there are lots of great local options for sprinkles, too (Williams- Sonoma, Sur la Table and Michael’s, just to name a few!).

Amaretto Truffles (adapted from Simply Recipes)

INGREDIENTS

  • 8 ounces bittersweet chocolate (preferably 62% cacao or higher) - we used Ghirardelli 70% cacao baking chips)

  • 1/2 cup of heavy whipping cream

  • 1-2 Tbsp Amaretto (OR 1 tsp almond extract)

  • Desired toppings to roll the truffles in (sprinkles, chopped nuts or cocoa powder)

DIRECTIONS

  1. Place chocolate chips in a glass or heat proof mixing bowl.

  2. Heat cream in glass measuring cup for 30-45 seconds, until hot but not boiling. Stir in the amaretto or almond extract.

  3. Pour cream over chocolate chips and let sit for about five minutes. Use a whisk to stir until the mixture is smooth and shiny (this base is called ganache).

  4. Pour mixture into a shallow pan or baking dish and refrigerate for at least one hour.

  5. Use a tablespoon to roll balls of the ganache. Roll in your hands quickly (as it will melt from the heat of your hands), then roll in desired toppings, then place on a baking sheet lined with parchment paper. Place in the refrigerator to set (about 1-2 hours - but truthfully, they can be enjoyed before they set completely!).
